Less waste, higher quality: Artificial Intelligence helps improve potato storage

A simple and familiar food, the potato is one of the world’s most widely grown and consumed crops. Its year-round availability, however, also depends on how effectively it can be stored after harvest. During storage, potatoes may begin to sprout, leading to losses in weight, quality and market value. Through the PRONTO project, researchers have developed models capable of detecting sprouting at an early stage, helping to reduce waste and optimise treatments across the supply chain.

A group of Computer Science Engineering students, coordinated by researcher Giuliano Gremlich from the Institute of Information Systems and Networking (ISIN), won the tenth Var Group hackathon held during the ZING (Zone of Innovation and Growth) event. The challenge, proposed by Italo Treno, involved designing an innovative solution to make corporate training more engaging and motivating.
